Перед установкой - убедитесь что запущен mysql, иначе не установится:

# /etc/init.d/mysql status
SUCCESS! MySQL running (17825)

Далее

# ./easyapache
Этапы:
1) Выбираем PHP Image Manipulation --> Start Customizing based on profile
2) Выбираем apache 2.2 или нужную версию
3) Выбираем php 5
4) Выбираем 5.x - нужную нам версию
5) Заходим в меню Exhaustive Option List --> Выбираем расширение php-mbstring и другие нужные нам расширения.
